PROJECT TITLE:

Development of healthy novel beverages from coffee cascara

 

PROJECT SUMMARY. Description of activities and objectives:

Coffee cascara is a byproduct generated during coffee processing. Coffee cherry tea, is a novel beverage slowly popping up around the globe. Commonly, the dried skins of the coffee cherries are collected after the seeds have been removed from the cherries. They are then dried in the sun before they are packaged and shipped off. Normally, cascara are either discarded as waste or used as compost. Now, they are being reused to produce a unique drink with different composition and taste than the coffee brew obtained from roasted beans. Coffee cascara may be of great interest for the food and pharmaceutical industries due to the phytochemicals present in this food matrix. The aim of the present project is to develop a natural, sustainable and health-promoting beverage from coffee cascara. To achieve this goal the following activities will be carried out:
1. Study of the state of the art.
2. Production of beverage formulations.
3. Chemical, biochemical and sensorial analysis.
4. Reformulation to obtain a high quality beverage.
5. Comparative study of the nutritional quality, safety and sensorial properties of the new beverages and those commercially available.
